		<description><![CDATA[I was at the Speciality and Fine Food Fair back in September and what a fantastic show it was, I met many different producers from across the fine food industry and tried many different foods. One of the more interesting things I tried was Pitney Sausages a rather strange and eclectic mix of pork, rusk and tomatoes they were set to make things sizzle. I also go to meet many friends both old and new enjoyed a drink, chat and an opinion on the direction this great industry is moving in. I wonder what other visitors have taken from the event, new trends? New Products? A New sense of optimism or all of the thoughts in question. One of the biggest talking points of the show was the amount of chocolate companies all with their stands next to each other, surely they would be scrabbling around for the same customers. If your neighbor can hear you talking to a buyer would that mean he would approach them and offer them something similar. <p>The trouble with Indian cuisine is that is has the most possessive and over-zealous of people to protect it &#8211; us Indians. So opposed are we to any form of change or modification that any form of change or modification that anyone may try and induce in this style of cooking that it is rejected as substandard and compromised even before being given a fair dueling chance.</p>
<p>But then that is true of most countries. France wouldn&#8217;t give a chance to what can be best described as an Oriental take on their cuisine; the Italians are worse still and nothing made outside of their family kitchen can even be classified as food!</p>
<p>The only trouble for us Indians is that our food, as it traditionally stands, is not exactly wine conducive. This is perhaps why we, of all populations, need to look at our cuisine again and to see how to adapt it to more contemporary moods.</p>
<p>Plated service was one big move towards this notion. The idea od serving one dish at a time, pre-plated could reduce the confussion of flavours in courses and make pairing more plausible, and explorable.</p>
<p>Fire, the Indian Restaurant at the park did it but it was well before its time and also, they relented easily to the staunch Indian guest who still insisted on their food being silver served onto their plates. Varq has recently reintroduced the same with much success but I still find Indian families having difficulty adapting. The latest endeavour is the restaurant Indian Accent at The Manor good hotel in Delhi the posh southern reaches of the capital.</p>
<p>The last thing, and perhaps the most important thing, that will make this place a sure shot success is their pricing. Super affordable lunch deals and paired multiple-course dinner s &#8211; this place is set to take over the capital. I definitely like Varq at the Taj but for the food they serve here at this charming boutique property and the detailed pairing that has been incorporated into the menu, I think my loyalties will be affected. All in all, fine Indian dining is gradually settling in and is here to stay. We Indians will finally be rescued from ourselves.

<p><i>Answer by st. eve</i><br/>hi, public wine tastings can get expensive when you&#8217;re pouring for a hundred people. Also , not everybody will appreciate the finer nuances of higher end wines so it&#8217;s a waste on some.<br />
If you are interested in trying some finer wines try signing up for private tastings at your  local wine merchant or maybe wine dinners; you pay more for these but if you let your store owner know you are serious about wine they should be interested in helping you try some nicer stuff.The laws vary in each state as to what  and where alcohol can be poured and sold so start with a friendly local wine shop.<br />
 Or you could get together with some wine friends and spring for a nice bottle to share and all get a taste .<br />

<p> If this training we publish our site in 2000, we could not even include a section of the State of New York, but the last ten years has gained some national attention and frankly, quite a bit of hype about his wines. </P> The quality of New York wines are spotty at best today, but the improvement and there are different types, which can sometimes provide good value for money. We must be realistic about our expectations for quality here is far from New York as an ideal climate for growing world class grapes. </P> The main problem that works in New York in terms of their wine industry is that the local grape varieties include names like Niagara, Catawba and Concord. You&#8217;re probably familiar with Concord grape juice from Welch&#8217;s commercials that have been on television, in some cases since before we were born. Concord grapes, frankly, not doing a very good wine. Well, if you for jammy wine that come from the public like grape juice with some alcohol poured looking for, then you should be set. </P> few wineries in New York State passed a better hybrid varieties such as Baco Noir, a combination of high native grape varieties and some of them, we all know better in terms of wine. Wineries in New York have to do it instead of planting Pinot Noir grapes themselves, that their winter is too cold to grow many varieties naturally. While these hybrids sometimes do a good wine to drink, they can sometimes be too bad. In this case, it definitely pays to do your research before you buy. </P> There are three areas each specialized in a different type of grape, which I emphasize the wine going to have to try when you&#8217;re ready to go are a small part: </p>
<p> 1) Hudson River Winery &#8211; Chardonnay. Still not too close to California standards, on average, but the cool climate make for an interesting flavor combinations. Sometimes you can find bottles of suppliers and prices half or one similar securities in California. Again, research before you hand, we do not yet point to a wine store and picked up each foot Hudson River Chardonnay. </P> 2) Finger Lakes Rieslings American. <p>Have you seen a picture of the grape vine? It is used in many paintings and has an infinitely delicate and fragile look to it. This is so even in reality. The grapes and grapevines are highly prone to getting hurt or bruised at any kind given time and during any kind of inclement weather conditions. Too much rain, bad crop of grapes; too little rain, bad vintage! Only a good rain fall and lovely summer with clement weather and preferably and early warm summer will beget a good harvest and a very fine vintage. However, you will only find out after the wine has been bottled and aged.The El Niño, in2006-2007, caused severe conditions to prevail over the Southern hemisphere. Dry soil, extreme drought, severe frosts, hailstorms and bushfires resulting from it caused widespread destruction of crops and added the threat of disease. The grape production in Australia dropped by a whopping 32% from the previous year according to official Australian Bureau of Statistics (ABS) surveys. Not only was the quantity of the crop affected, but the quality too was severely impacted by the shortage of water and the smoke from the bushfires. What a huge impact the blowing of an &#8216;ill wind&#8217; has on the vintage! However, all was not lost so to speak. According to ABS 978 million liters of wine was produced in 2006-07. The earlier crops of 2003-2005 had produced some exceptionally good vintages, so the Australian wine Exports continued to see an increase in sales and were up by 4%. Even with decreasing prices of wine the Australian Wines have done well in exports worldwide. Sales to the UK accounted for 34% of the total export according to ABS followed by the EU and then by North America. 2005-2006 produced some very fine Rosé wines. Though not as popular as the Australian Reds, they are gaining in popularity. They are basically partly made red wines and drunk very young. They are very adaptable to a variety of foods with which they can be drunk as accompaniments; easy to chill, fruity, light or full bodied, sparkling or still sweet or dry or even crisp, bone-dry. They can complement any kind of palate. The Rosé especially complements the Australian&#8217;s love of life outdoors, on the beach, at barbecues, the love of dining outside and long hot summer days. It has a combination of very summery aromas of seasonal fruits, raspberries, cherries, watermelons, strawberries, plums, kiwis, etc. Have the Rosés with Thai food (Charles Melton, Victoria 2006 or the Annies Lane, Clare Valley 2006), Barbecues (Bremerton Racy Rosé 2006 or the GibbstonValley Blanc Pinot Noir 2005), and even with Gourmet Pizza (Juniper Crossing Rosé 2006 or the Mount Majura Rosé 2006). The El Niño may have given the Australian Industry a rough ride, but the earlier crop helped to ride out the turbulence. Therefore, the exports did not suffer too badly. Their domestic market sales also picked up by 4%. The Australian Wine Industry is on an upswing, the graph is climbing, despite adverse conditions affecting production. Kudos to Australian Wine!

<p><i>Answer by Grape Stomper</i><br/>The origins of wine making began back in 1788 when vine cuttings where brought to shore by Captain Arthur Phillip at Sydney Cove.  These initial vines proved unsuccessful but success stories where not far around the corner when the settlers ventured further a field and found good quality soil that combined  with the strong sun and favorable overall climate led to the beginnings of the Australian wine industry in land around Parramatta and close to the current Hunter Valley region near Cessnock.<br />
The major growth in the Australian wine industry  began with the introduction of European immigrants from Germany and Switzerland, bringing with them the knowledge and experience needed to start cultivating the excellent growing conditions, particularly in the cooler southern regions of the country, specifically regions such as the Barossa in South Australia.  By the turn of the 19th century there were vineyards many of today’s major viticulture areas.<br />
The original wines where heavily influenced by the European settlers who grew them,  this changed over time as tastes and economic circumstances changed.  Australia, due to it’s British background has until recently had more of a taste for beer (Four X anyone?) which has led to a difficult market for Australian wineries to sell into.  For years the fortified wine was the main stay of the market and still holds a large proportion of it today.  At many wineries you can pick up excellent port and desert wines at very good prices.<br />
Tastes changed around the 1960’s as Australia matured as a nation, bringing with it greater disposable income and an increased desire for quality wines. Add to this an increasing demand from overseas and the beginnings of a revolution were seeded.  New wineries began to spring up around the nation in new and traditional areas, leading to a greater variety and increase in quality.<br />
Australia continues to grow and is currently a favourite in the American, European and Asian Markets.</p>

<p><i>Answer by Sugar Pie</i><br/>Usually red wine is added after you&#8217;ve sauteed your veggies to deglaze the pan, getting up all the cooked-on bits which will enrich the sauce.  I find a half-cup or less to a normal batch gives a nice depth of flavor.  Makes it taste like sauce you&#8217;ve had in a restaurant that you couldn&#8217;t quite mimic before now.  It won&#8217;t taste like wine, just a more interesting sauce than tomatoes.</p>
<p>I use those little bottles of wine that come in a 4-pack, by Sutter Home or Gallo.  About half of one of those is plenty.</p>

<p>The drinking and worshipping of Wines goes back longer than written history. It emerges with civilisation itself from the East.</p>
<p>It was in fact the Romans who brought the first vines to France at about 500 BC, and planted in bordeaux at approximately 50 AD. There has been much speculation about the quality of Roman wine, which is quite well documented. It apparently had extraordinary powers of keeping, which in itself suggests that even then it was good. The great vintages were discussed and even drunk for longer than seems possible; there are recordsof a wine made in 121 BC being drunk when it was 125 years old.</p>
<p>The most consequential move in history was when the Romans took their vines to Gaul, by the time they withdrew in the fifth century from what is now France, they had laid the foundations for almost all the greatest vineyards of the modern world. Unlike the Greeks, the Romans were not limited to earthenware and amphora&#8217;s to store their wines in, they had barrels not dissimilar to modern barrels and bottles not dissimilar to modern bottles.</p>
<p>Shakespeare was also a great lover of wine, and left some of the most descriptive tasting notes of the 17th century.</p>
<p>Late in the 17th century the cork was discovered. Bit by bit it became clear that wine kept in a tightly corked bottle lasted much longer than wine kept in a barrel as it had been, which was likely to &#8220;go off&#8221; at any time after the barrelwas broached. It was also discovered that wines kept in different sized bottles also aged in a different way, acquiring what is known as a bouquet.</p>
<p>The Wine trade was booming and bordeaux wines were being exported all over the world. In fact ships were measured by the number of tonnes of wine they could carry.</p>
<p>In 1855 Napoleon III effectively started the &#8220;Fine Wine Index&#8221; when he classified the wines in bordeaux from 1 to 5.</p>
<p>He based his decisions on the quality and prices realised of each Châteaux wines over the previous 100 years or so. Apart from one change in 1979 when Château Mouton-Rothschild was promoted from a 2nd growth to a 1st growth wine, nothing has ever changed.</p>
<p>In fact the laws he put in place in 1855 are vigorously upheld today and controlled by the Institut D&#8217;Appellations d&#8217;Origine and upheld by EC directives.</p>
